Cocoa was extremely scarce in 1946, following WWII. Around this time, Ferrero was established as a pastry shop in Piedmont, Italy. In response to the scarcity of cocoa they created a paste made of hazelnuts and a little cocoa, which could be spread on bread. Over the following years, the Ferrero group continued to remaster the recipe until in 1964, the first ever jar of Nutella was created. The creamy, hazelnut and cocoa spread continues to be hugely popular worldwide still today.

Gluten Free Nutella Muffins

Melt in the mouth gluten free vanilla muffins, swirled with Nutella. These are a huge hit in our house, and so easy to make.

Ingredients
  

  • 200 g butter at room temp
  • 200 g caster sugar
  • 200 g gluten free self raising flour blend
  • 160 g Nutella
  • 3 medium eggs
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 180°C and line a 12-hole muffin tin with muffin cases.
  • Cream the butter and sugar until soft, light and fluffy.
  • Sieve in the gluten free flour blend, and add the eggs. Beat to combine, stopping at least once to scrape down the sides of the bowl to make sure that all of the ingredients are fully incorporated.
  • Loosen the Nutella by gently heating it over a low heat if necessary.
  • Once the mixture is smooth, gently fold in the Nutella.
  • Split the mixture evenly between the 12 muffin cases.
  • Bake for 20-22 minutes.
  • Cool on a wire rack. Enjoy!
