What are S’mores?

S’mores are a classic campfire treat in the USA and are now gaining in popularity the UK and Ireland. S’mores are a sweet snack consisting of chocolate and toasted marshmallows sandwiched between graham crackers.

Gluten Free S’mores Cookies

Ingredients
  

  • 125 g butter
  • 100 g soft light brown sugar
  • 75 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 300 g gluten free self raising flour
  • 1.5 tsp baking powder ensure gluten free
  • 1/2 tsp bread soda
  • 1/2 tsp xanthan gum
  • pinch of sea salt
  • 300 g chocolate chips

For the marshmallow

  • 3 large egg whites
  • 150 g caster sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cream of tartar

Instructions
 

  • Preheat the oven to 200ºc/180ºfan.
  • Line two-three trays with parchment paper.
  • Add the butter, light brown soft sugar and granulated sugar to a bowl and beat until creamy.
  • Add in the egg and vanilla extract and beat again.
  • Add in the gluten free self raising flour, baking powder, bicarbonate of soda, xanthan gum and salt. Beat until a cookie dough is formed.
  • Stir in the chocolate chips until evenly distributed.
  • Scoop the cookies (using a 5cm scoop) onto lined trays.
  • Bake in the oven for 11-13 minutes, or until golden.
  • Remove the trays from the oven and leave the cookies to cool fully on the trays

For the marshmallow fluff

  • Fill a saucepan with approximately 2 inches of water, and place it on the hob (Make sure the bottom of the bowl isn't touching the water).
  • Add the egg whites, cream of tartar and sugar to the bowl and turn the heat on medium-high.
  • Whisk the mixture continuously with a handheld balloon whisk until all the sugar has dissolved.
  • Once the sugar has dissolved, carefully pour the hot sugar syrup into the bowl of a stand mixer.
  • .Add the vanilla extract and then, using the whisk attachment, whisk the warm mixture on a high speed. It should take approximately 6 minutes of whipping for firm, glossy peaks to form (this will depend on the speed of your stand mixer). Once the mixture has reached this stage, the marshmallow fluff is ready to use.
  • Spoon the marshmallow fluff into a piping bag fitted with a large piping nozzle.
  • Pipe a generous layer of marshmallow fluff onto half of the cookies, and place the remaining cookies on top to create your gluten free s'mores cookies.
