Gluten Free Yorkshire Puddings

Ingredients
  

  • 100 g gluten-free self-raising flour blend
  • 1/2 tsp salt
  • pinch of white pepper
  • 2 eggs
  • 250 ml milk
  • oil (e.g. olive oil) to cook

Instructions
 

  • Preheat the oven to 200°C Fan/Gas 7.
  • Sift the flour into a bowl. Add the salt, pepper, and eggs. Beat with a balloon whisk to combine.
  • Gradually add the milk, stirring constantly, to create a smooth batter. Leave the batter to stand for ten minutes.
  • Add two tablespoons of oil into each of the cups of a muffin tray (6 cups in total).
  • Place the muffin tray into the hot oven and leave for 5–10 minutes, until the oil is very hot.
  • Carefully remove the muffin tray from the oven. The oil should be bubbling.
  • Pour approximately 30ml of batter into each muffin cup, and then carefully return to the oven to bake for 10–15 minutes, until the Yorkshire puddings are risen and golden-brown.
  • Remove from the oven and serve immediately with your favourite roast and lashings of gravy.

Notes

  1. The trick to perfect Yorkshire puddings is ensuring that the oil is extremely hot.
  2. Avoid opening the oven door for at least 10 minutes, because this will prevent the puds from rising as desired.
