Ingredients

  • 500 g lean minced beef
  • 1 onion finely diced
  • 1 garlic clove crushed
  • 150 g frozen peas
  • 2 carrots finely diced
  • 1 tbsp rapeseed oil
  • 2 tbsp gluten free plain flour
  • 425 ml cold water
  • 30 g Erin gluten free oxtail soup roughly half the packet
  • 2 tsp gluten free soy sauce
  • 1 tsp ketchup ensure gluten free
  • 1/2 tsp white wine vinegar ensure gluten free
  • 1/2 tsp cracked black pepper

Instructions

  • Heat the oil in a large pan over a medium heat and, once hot, cook the onions and carrot for 5 minutes until softened, stirring occasionally.
  • Add the garlic and cook, stirring for 1 minute.
  • Add the mince. Break it up using a wooden spoon and turn it regularly to brown completely (approx. 4-5 minutes).
  • Add the gluten free flour to the pan and stir through for a minute. Remove the pan from the heat and set aside whilst you make the sauce.
  • Empty half the contents of Erin gluten free oxtail soup packet into a separate saucepan. Gradually add 425ml of cold water, stirring until blended.2
  • Bring to the boil, stirring continuously, then reduce the heat to a simmer. Stir in the gluten free soy sauce, ketchup and white wine vinegar.
  • Return the pan containing the meat to the hob over a medium heat. Pour over the sauce and stir until evenly distributed.
  • Simmer for 15 minutes, stirring occasionally.
  • Add the peas and cook for 5 minutes more then check the seasoning and consistency before serving. Mix a teaspoon of cornflour with water and stir into the mixture if it seems too thin. Season with cracked black pepper.
  • Serve on a bed of boiled rice or alongside creamy mashed potatoes.
