Blondies are dense, fudgy, butterscotch flavoured bakes that are every bit as delicious as their rich, chocolatey cousin, the brownie.

Gluten Free Raspberry & White Chocolate Blondies
Delicious, fruity, fudgey and chocolatey; everyone is sure to love these gluten free raspberry & white chocolate blondies.
Ingredients
- 250 g butter
- 250 g caster sugar
- 3 large eggs
- 175 g gluten free self raising flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp xanthan gum
- 250 g white chocolate chips
- 200 g fresh raspberries
Instructions
- Preheat the oven to 180C/160C Fan.
- Grease & line a 9x9inch square tin.
- Melt the butter over a low heat, then set aside to cool.
- Whisk together the eggs, caster sugar and vanilla extract for a few minutes until it has doubled in size and the colour has turned pale (The mixture should hold the figure of '8' for a few seconds when the whisk is lifted). Whilst whisking, beat in the melted butter a little at a time, making sure each spoonful of butter is fully mixed in before adding a bit more.
- Sift in the gluten free self raising flour, baking powder and xanthan gum. Fold in gently.
- Gently stir in the chocolate chips and the raspberries.
- Pour the mixture into the tin, and bake in the preheated oven for 35-40 minutes.
- Leave the blondies to cool in the tin completely, then cut into 12/16 squares to serve.
