Gluten Free Raspberry & White Chocolate Blondies

Delicious, fruity, fudgey and chocolatey; everyone is sure to love these gluten free raspberry & white chocolate blondies.

  • 250 g butter
  • 250 g caster sugar
  • 3 large eggs
  • 175 g gluten free self raising flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp xanthan gum
  • 250 g white chocolate chips
  • 200 g fresh raspberries


  • Preheat the oven to 180C/160C Fan.
  • Grease & line a 9x9inch square tin.
  • Melt the butter over a low heat, then set aside to cool.
  • Whisk together the eggs, caster sugar and vanilla extract for a few minutes until it has doubled in size and the colour has turned pale (The mixture should hold the figure of '8' for a few seconds when the whisk is lifted). Whilst whisking, beat in the melted butter a little at a time, making sure each spoonful of butter is fully mixed in before adding a bit more.
  • Sift in the gluten free self raising flour, baking powder and xanthan gum. Fold in gently.
  • Gently stir in the chocolate chips and the raspberries.
  • Pour the mixture into the tin, and bake in the preheated oven for 35-40 minutes.
  • Leave the blondies to cool in the tin completely, then cut into 12/16 squares to serve.
