The key to tender, juicy chicken pieces is buttermilk. The acid in buttermilk helps to break down protein chains in the chicken, which tenderises it. For this reason, restaurants that serve delectable fried chicken, for example KFC, marinade the chicken in buttermilk before coating it in seasoned flours and frying.

Gluten Free Air Fried ‘KFC’

Ingredients
  

  • 1 Kg chicken pieces Use a mix of (bone in) chicken thighs and chicken drumsticks
  • 250 ml buttermilk
  • 1 tsp salt
  • 1/2 tsp white pepper
  • low calorie cooking spray ensure it's gluten free

For the coating

  • 120 g gluten free plain
  • 60 g corn flour
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1 tsp smoked paprika

Instructions
 

  • Place the chicken into a large mixing bowl. Add the salt and pepper, then pour over the buttermilk. Cover loosely with foil, then leave to marinate in the fridge for 10-30 minutes.
  • Meanwhile, to a separate bowl, add the gluten free flour, corn flour, salt, pepper and smoked paprika. Mix with a fork to disperse ingredients evenly.
  • Dip each of the chicken pieces into the dry ingredients (coating), and toss until evenly coated on both sides.
  • Generously spray the air fryer basket with a low calorie cooking spray, to prevent sticking. Set the air fryer to 180°C.
  • Place a single layer of chicken into the air fryer basket, and then spray the top surface of each piece of chicken with low calorie cooking spray.
  • Air fry the chicken for 15 minutes at 180°C, then turn each piece, and cook for a further 10-12 minutes.
  • Once the chicken pieces reach an internal temperature of 75°C, they are ready serve. Repeat the process until all of the chicken is cooked.

Notes

Don’t overfill your airfryer. Each piece of chicken must be placed onto the base of the airfryer basket in order to achieve the desired crispy coating. This means that you may have to cook the chicken in batches, depending on the size of your airfryer.
