The Home Economics Bit
The word streusel comes from the German word streuen, which means to scatter or sprinkle. A streusel is essentially a crumb topping that is commonly scattered over the tops of muffins, cakes, and pies. Streusel is typically made with flour, butter and sugar, and sometimes cinnamon. It gives baked goods a little extra texture and sweetness.

Gluten Free Buttermilk Cinnamon Streusel Cake
This soft and tender gluten free buttermilk cake is a delicious teatime treat. Buttermilk creates a moist, light cake that has a generous layer of cinnamon sugar inside and on top.
Ingredients
- 2 large eggs
- 230 g butter melted and cooled
- 300 ml buttermilk
- 1 tsp vanilla extract
- 360 g gluten free self raising flour
- 200 g caster sugar
- 1 tsp baking powder
- 1/2 tsp xanthan gum
- 250 g light soft brown sugar
- 1 tbsp cinnamon
- 75 g butter melted
Instructions
- Preheat the oven to 180°C / gas mark 4.
- Lightly grease a 9 inch round baking tin, and line the base with a piece of parchment paper.
- Combine the wet ingredients by whisking together the eggs, buttermilk, 230g cooled melted butter, and vanilla extract in a large mixing bowl.
- Mix the gluten free self raising flour, caster sugar, xanthan gum and baking powder in a medium mixing bowl.
- Meanwhile, melt the remaining butter over a low heat then and set aside to cool.
- Make the streusel by mixing together the light brown sugar and cinnamon in a medium bowl until well combined.
- To create the cake batter, pour the dry ingredients into the wet ingredients and mix until everything is just combined. Take care not to over-mix.
- Pour half of the batter into the prepared baking tin.
- Sprinkle half of the cinnamon sugar mixture on top of the batter in the baking pan.
- Pour the remaining batter carefully over the cinnamon sugar layer. Sprinkle the remaining cinnamon sugar over the top.
- Drizzle the 75g melted butter over the top.
- Bake for 35 to 40 minutes, until baked through.
- Leave to cool in the tin for 15 minutes, then remove from tin and cool completely on a wire rack.
- Best served warm or at room temperature.
