A brownie cookie is a rich chocolate cookie with a soft and fudgy texture, like that of a classic brownie. Though they are typically thinner than traditional brownies, they are similar in both flavour and texture.

Gluten Free Brownie Cookies
Rich and chocolatey gluten free cookies with all of the softness and chewiness you'd expect from a classic brownie.
Ingredients
- 110 g butter melted
- 200 g caster sugar
- 180 g self raising gluten free flour blend (or 180g gluten free flour blend and 1 tsp baking powder) sifted
- 50 g good quality cocoa powder sifted, ensure it's gluten free
- 2 medium eggs
- 1 tsp vanilla extract
- pinch of salt ensure it's gluten free
- 100 g milk chocolate chips ensure they're gluten free
- 100 g white chocolate chips ensure they're gluten free
Instructions
- Preheat the oven to 180°C (gas mark 5).
- Line two large flat baking trays with greaseproof paper.
- Melt the butter over a low heat.
- In a large mixing bowl, combine the melted butter, sugar and cocoa powder. Beat for 2-3 minutes until evenly combined, stopping the mixer once to scrape down the sides and the base of the bowl with a rubber spatula if necessary.
- Add the eggs and the vanilla extract. Beat for a further 2-3 minutes.
- Sift in the self raising gluten free flour blend and the salt. Beat for 1-2 minutes until a smooth batter is achieved, stopping the mixer to scrape down the sides and the base of the bowl with a rubber spatula if necessary.
- Fold the chocolate chips into the batter until evenly distributed. I do this using a rubber spatula.
- Using an ice cream scoop – for evenly sized cookies – scoop the cookie batter onto the lined baking trays, leaving at least 10cm between each cookie as they will spread a little as they bake.
- Bake for 10-12 minutes until just firm and beginning to crisp a little around the edges.
- Remove the cookies from the oven and allow them to cool on the tray for 10-15 minutes, before carefully moving them to a wire rack to cool completely.
- Enjoy warm, or straight from the fridge for a chewier cookie. These cookies will be perfect for 3-4 days if stored in the fridge, or in an airtight container.
